Four Seasons Whistler: Drunken A5 Wagyu: Sidecut Unveils Chef’s Tasting Menu

Which cocktail reigns supreme: the Old Fashioned or the Manhattan? This question is sure to ignite a spirited debate. Both are classic whiskey-based cocktails, often garnished with a cherry, but they each have their own distinct fan bases. On one side, there are the passionate advocates of the sugar-kissed Old Fashioned, while on the other, the cool defenders of the vermouth-infused Manhattan stand firm. This seminar is a head-to-head showdown between these two iconic cocktails.
Spirits educator Keith Nicholson, from Statera Academy, will guide you through the rich histories of these legendary drinks before diving into a discussion on their recipes, components, and mixing methods. Participants will have the opportunity to sample a selection of ryes and bourbons individually, followed by hands-on experience creating mini versions of both cocktails. By the end of the seminar, we’ll put it to the test and see which cocktail emerges as the victor!

Drink Seminar: A Cocktail Showdown: Old Fashioned vs. Manhattan

Chef Quang (pronounced ‘Wang’) Dang began his culinary career at Joe Fortes Seafood and Chophouse and further apprenticed at the Metropolitan Hotel before moving to West Restaurant, where he worked as junior sous chef. West won the Vancouver magazine ‘Restaurant of the Year’ in 2004 and 2005 during his tenure. After three years at the renowned seafood-centric C restaurant, where he worked with Chef Rob Clark, O.C., Quang became executive chef at the Metropolitan Hotel’s Diva Restaurant. He returned to West as executive chef for seven years, was executive chef at Whistler’s Araxi Restaurant, then became corporate executive chef for their parent company, Top Table Group. More recently, he has been executive chef at D.I.C.E.D., a culinary social enterprise organization. 
Early in his career, Quang quickly established himself as an advocate of sustainability and a champion of West Coast cuisine, a role that he continues to undertake in defining his approach to modern cookery. 
Quang went on to compete in a number of international food competitions such as the Bocuse D’Or in Lyon, France; the National Chaîne des Rôtisseurs in Winnipeg; and as a Canadian representative at the European Seafood Exposition in Brussels, the largest of its kind. “Every day brings a new adventure,” he says, “defined by the seasons and the extraordinary ingredients available to us in the Pacific Northwest. It is my privilege to have worked alongside the finest culinary and service brigades in Canada.”

Culinary Stage: Executive Chef Quang Dang Taste of Vietnam

Chef Trevor Randle is a distinguished Red Seal Chef and an accomplished educator, holding a Masters of Education from the University of British Columbia. As the chef for BC Agriculture in the Classroom and instructor at Maple Ridge Secondary School, he has dedicated his career to shaping the next generation of culinary talent. He plays an integral role in fostering the Take a Bite of BC program in secondary teaching school kitchens around the province. Chef Randle demonstrates to culinary arts students the importance of cooking with fresh , local products and encourages them to appreciate the efforts farmers make to grow our food and make it available fresh to our tabes.
Trevor’s leadership extends beyond the classroom, he serves as the president of the BC Teaching Chefs Association. As an inclusive educator at heart, he has mentored countless chefs and educators promoting the value of fresh, BC grown products. Trevor’s unwavering passion for culinary arts, education, food security and BC agriculture makes him a prominent figure in both the culinary and educational communities.
On stage he hosts Andrea van Iterson, a beef rancher from Westwold BC to encourage guests to Take a Bite of BC.
Andrea van Iterson, Beef Rancher from Westwold, BC
Andrea grew up on her family’s beef farm in Westwold, BC.  She operates the family farm today with her husband, three children and youngest brother. Westwold View Farms operates a cattle feedlot where they source BC cattle to raise quality grain finished product for BC consumers.  Andrea believes in the importance of being active within the cattle industry.  She serves as a board member with the National Beef Check-Off, as a producer participating in updates to the Beef Codes of Practice, and a member of the BC Cattlemen’s Association Public Affairs and Education Committee.  Outside of the cattle industry, Andrea is a board member with an organization that supports youth at risk as well as a 4-H youth in agriculture leader and supports her sons in basketball and football.

Chef Quang (pronounced ‘Wang’) Dang began his culinary career at Joe Fortes Seafood and Chophouse and further apprenticed at the Metropolitan Hotel before moving to West Restaurant, where he worked as junior sous chef. West won the Vancouver magazine ‘Restaurant of the Year’ in 2004 and 2005 during his tenure. After three years at the renowned seafood-centric C restaurant, where he worked with Chef Rob Clark, O.C., Quang became executive chef at the Metropolitan Hotel’s Diva Restaurant. He returned to West as executive chef for seven years, was executive chef at Whistler’s Araxi Restaurant, then became corporate executive chef for their parent company, Top Table Group. More recently, he has been executive chef at D.I.C.E.D., a culinary social enterprise organization. 
Early in his career, Quang quickly established himself as an advocate of sustainability and a champion of West Coast cuisine, a role that he continues to undertake in defining his approach to modern cookery. 
Quang went on to compete in a number of international food competitions such as the Bocuse D’Or in Lyon, France; the National Chaîne des Rôtisseurs in Winnipeg; and as a Canadian representative at the European Seafood Exposition in Brussels, the largest of its kind. “Every day brings a new adventure,” he says, “defined by the seasons and the extraordinary ingredients available to us in the Pacific Northwest. It is my privilege to have worked alongside the finest culinary and service brigades in Canada.”

Signature Event: Cellar Door

Mother Nature v. Okanagan Wineries: A Climate Conundrum Package Ticket

The challenges and reality that Okanagan wineries face will be compassionately presented to the audience. Strategies and options to navigate challenges due to global climate change as they pertain globally to the vineyards, winemaking, tourism and marketing will be discussed.  Consumers will learn what to expect from the industry based on the choices wineries make. 
Who are the speakers? 
Jeff and Decoa Harder are cofounders of Ex Nihilo Winery in the Okanagan Valley. For 20 years they farmed 100 acres annually from Vernon to Oliver, building a robust business and wealth of knowledge about the Okanagan Valley’s growing environment.
 
What makes them experts? 
In addition to their literal hands-on experience running a winery and managing various vineyards, they have also produced wines from Canadian and US growers on behalf of the Rolling Stones (the band), and have been responsible with international distribution. The couple now own and operates ‘Groupe One Consulting’, offering business operations and marketing management services to the wine industry.
 
Why does this conversation matter? In January 2024, the Okanagan Valley experienced a catastrophic, unseasonably cold event that wreaked havoc on vineyards and challenged the livelihood of an entire industry. The estimated loss of grape and wine is projected to be as high as 99% and revenue losses in the $340 million range. This is the second year in a row that BC wine grape growers have had extensive losses due to unseasonably cold events, having lost 58% of their crops in 2023.
 
So what? BC crops – not only vineyards, but food growers and the agriculture sector in its entirety – are feeling the strain from climate change. Significant temperature swings, drought, atmospheric river events, and the impacts of monocrops on our soil health are challenging our growers. The Harders are going to compassionately explore strategies for growers and tips for consumers as we all navigate (and adapt to) mother nature’s impact on our crops.

Young and innovative chef, Austin Cunningham (Fergie's Cafe, Squamish) is partnered with the ancient winemaking techniques of Besso Gotsadze (La Fabrique St-George, Vancouver) in this exciting four course natural wine luncheon.Join in the celebration of new and old relationships and the community that is forged through food and wine as we savor four courses brought to you by chef Austin Cunningham. Besso Gotsadze will bring his passion and expertise of ancient winemaking techniques as he pairs each course with his locally produced, natural Georgian wines. Jason Dabbagh, Austin's former culinary instructor and mentor, will accompany his former student in the kitchen helping to deliver food, context, and story in this relational and inspiring luncheon.
Jason Dabbagh (BEd, RSE) grew up in a home where food was not just a means of nourishing bodies, but also a means of nourishing relationships and community. Hospitality was paramount.
Jason extended this philosophy into his teaching practice: a culinary high school teacher since 2011, Jason continues to lead with the tenants of hospitality, community, service, and compassion. He also believes that building confidence in people through food education will promote better eating habits and dramatically improve quality of life. He is most proud of the creation of a program that empowers students as owners/operators of a small food business and especially proud of the young successful cooks that have emerged from it.

My journey started in high school when my mentor, Jason Dabbagh, and I formed a culinary team with several other students. The Cellar by Araxi: Burrowing Owl Winery Dinner

Chef Quang (pronounced ‘Wang’) Dang began his culinary career at Joe Fortes Seafood and Chophouse and further apprenticed at the Metropolitan Hotel before moving to West Restaurant, where he worked as junior sous chef. West won the Vancouver magazine ‘Restaurant of the Year’ in 2004 and 2005 during his tenure. After three years at the renowned seafood-centric C restaurant, where he worked with Chef Rob Clark, O.C., Quang became executive chef at the Metropolitan Hotel’s Diva Restaurant. He returned to West as executive chef for seven years, was executive chef at Whistler’s Araxi Restaurant, then became corporate executive chef for their parent company, Top Table Group. More recently, he has been executive chef at D.I.C.E.D., a culinary social enterprise organization. 
Early in his career, Quang quickly established himself as an advocate of sustainability and a champion of West Coast cuisine, a role that he continues to undertake in defining his approach to modern cookery. 
Quang went on to compete in a number of international food competitions such as the Bocuse D’Or in Lyon, France; the National Chaîne des Rôtisseurs in Winnipeg; and as a Canadian representative at the European Seafood Exposition in Brussels, the largest of its kind. “Every day brings a new adventure,” he says, “defined by the seasons and the extraordinary ingredients available to us in the Pacific Northwest. It is my privilege to have worked alongside the finest culinary and service brigades in Canada.”

Raised in a food-centric family, Alana graduated from Dubrulle Culinary School in 2002, worked in some of the most demanding kitchens in Vancouver, and quickly earned recognition as a leading and coveted chef in the city, successfully running the kitchens at Cru Restaurant and The Hart House.
A Chopped Canada winner, her confidence and trust in herself is contagious. Board member of the Les Dames d’Escoffier chapter of Vancouver, Alana is committed to empower women in her profession.
